Venice Glass Blowing on European Discovery, and time in Venice

Ok, the one city that appears we REALLY don't have enough time in is Venice.
The Glass Blowing demonstration is included in the tour, but frankly, I don't give a rat's behind about glass blowing.
Can we skip this, but still do the Gondola ride excursion?
Is the glass blowing IN Venice, or is it on an island outside of Venice?
Also, I guess that leads me to ask, do we have to do the Gondola ride all at the same time, or can you just go and do it at a time that works better for us?
I really want to go to Piazza San Marco while the sun is still out, but it seems like we don't get into Venice until 130pm-ish, and that doesn't leave a lot of time for anything, considering we leave Venice early the next morning.
