Canyoning in Queenstown

I've been reading up about what there is to do in Queenstown, and I came across this website for canyoning:

It looks really fun and something that I'd be interested in doing. I don't see it on the list of Contiki optionals though, so I was just wondering how easy it is to do this sort of stuff on your own. Like is it best to book it ahead of time or should I just wait until I'm on the trip to see if anyone else would be interested in going? I'm just worried that by booking ahead it would limit me in what other optionals I could do in Queenstown (particularly I want to do skydiving and white water rafting).
