Paying for Excursions

When does one pay for the optional excursions?
I will be taking my second Contiki tour at the end of this year. My first tour, Europe, we paid for the excursions in one lump-sum around the beginning of the tour. My next tour, Aussie Explorer, has a LOT more excursions I am interested in taking and will end up costing more than I paid last time.
I think I would still like paying the one lump-sum in the beginning (to get it over with), but I'm curious how past aussie tours have run.
