What do u wish u had known for New Zealand?

Hey guys
Just wanted to know what you guys thought of your tours that you have done in New Zealand. Like what did you wish you had and hadn't taken, what food places are good to eat at, what optionals were dodgy and what were great etc etc??
Is there any general advice??
