Exchanging money before the trip? Or After? Traveller's Cheques?

I'm doing the Grand Explorer in NZ and I have no clue how to go about this. I know it's best to do travellers cheques when ever you travel, but is there even time to cash them throughout the tours? I heard it can be better to exchange your money abroad too? What is suggested?
