Budget for NZ Grand explorer optional activities

Hi there,
My girlfriend and I are going on the grand explorer tour in nov/dec this year and I was wondering whether anyone had any suggestions on how much money we should put aside each for optional extras?
Im not exactly sure how much free time we get but we definately want to do as much as possible and I mean ALOT! We dont want to come back feeling like we have missed out on anything.
