Booking Tours when in New Zealand

Hi,
I'm planning on going to New Zealand for a Working Holiday. Not sure how long I will be going, but I'd like to pop a NZ Contiki tour in the middle of my NZ trip and an AU one before I go home.
Anyway, since I do not know how long I will be going for, is it possible to book these trips while I'm in New Zealand?
Any advice would be great.
