One cuisine that Australia still needs to embrace is soul food. Why? Only because soul food might be the greatest cuisine of all time, ever*.
But while Australia catches on, America is where you can really embrace it.
Soul food is intrinsically linked with African American culture, specifically in the South. (Except that the origins of soul food almost certainly are rooted in African culture.) It is delicious.
Pie ‘n’ Thighs is a hipster version of the real thing – while it certainly is inspired and stays true to real soul food, it’s potentially a little less authentic. But no less tasty.
It’s a cute little diner in Williamsburg, just a little out of the main Bedford Ave action, where you might have to wait some time for a table. But it’s worth it for the fried catfish and the best mac-n-cheese you ever had.
Also, if there’s room afterwards, you have to try the S’more cake and/or Key Lime pie.
Then you’ll most certainly need a nap.
*Actually, all food in general is the best cuisine of all time.
