We know that technically Hawaii is a state of America, but it really seems like its own nation, don’t you think? (That’s not really the point of this post, but we were just thinking about that. So forgive us.)
A brand-spankin’ new pop-up restaurant just appeared in Honolulu and we want to go to there. It’s called The Pig and The Lady and it’s a Vietnamese diner, but with a certain Hawaiian, tropical tinge.
The South-East Asian flavours are blended with the tropical tastes of Hawaii like so: instead of straight-up spicy pork belly, The Pig and The Lady smoke it. Then there is green papaya Kim Chee, Bun Bo Honolulu, and a bunch more.
Just add papaya or coconut to anything and we’re in.
