How much free time do you get on a tour?

I am a young adult and me and my friend want to take some time off of work at the same time and go to Europe. We want to see all the places that most tours have to offer were looking at going for about 25 days. We like to have a lot of fun and meet a lot of different people being in the occupation were in, we meet a lot of different people. We were wondering if on these tours were able to see some night life in the places we visit and if so how much will we get to enjoy?
